Cold/hot holding temperatures:
Walk in cooler was 4 degrees Celsius
Walk in freezer was -14 degrees Celsius
Display freezer was -20 degrees Celsius
Ice cream freezer was -25 degrees Celsius
Display cooler was 4 degrees Celsius
Prep cooler was 4 degrees Celsius
Under counter cooler was 4 degrees Celsius
Under counter freezer was -10 degrees Celsius
Hot holding units (x3) were all over 60 degrees Celsius.
The two freezers in the kitchen were both less than -18 degrees Celsius
The two coolers in the kitchen were both 4 degrees Celsius
Reviewed temperature log - no concerns noted.
Food display and storage practices were good.
Organization of storage areas was good.
Hand sinks at the front and back of house were stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
Food handler hygiene and foodhandling practices appeared satisfactory.
Quats sanitizer concentrations were 200ppm
General sanitation was satisfactory.
Chemicals were stored in a safe manner.
No signs of pests - premise serviced once/month by a licensed pest control company.
