Observation (CORRECTED DURING INSPECTION): Wiping cloths were observed to be stored in a container of bleach water sanitizer which was measured at less than 50 ppm chlorine.
Corrective Action(s): Bleach water was changed and measured at 100 ppm chlorine. Ensure that sanitizer is always available at the correct concentration for effective sanitizing of food contact surfaces (e.g. 100 to 200 ppm chlorine).

Observation (CORRECTED DURING INSPECTION): Ice scoop was stored in a container located in the small space between hand washing sink and ice machine. No splash guard is present for this sink.
Corrective Action(s): Ice scoop relocated to another area. Ensure that food and/or utensils are not stored in this area as they may be subject to splashing and potential contamination from hand washing. An appropriate splash guard must be in place if food and/or utensils are to be stored next to hand sink.

Comments

Follow up to Rpt # MBEK-B55T4K.
- Raw shell eggs and raw meats were not observed to be located above ready-to-eat foods
- Bag of sugar was not observed to be stored on the floor
- Box of wine was stored in another location away from garbage
- Mayonnaise, vinegar, and soy sauce containers were located separately from cleaning chemical storage
- No foods were observed to be thawing at ambient temperature
- Bleach water sanitizer was available in labeled spray bottles in front and back areas at 100 to 200 ppm chlorine
- Area located under front sushi counter has been cleaned
- A small amount of vegetable tempura was observed near the cook line. It was stated that tempura was "just prepared." Ensure tempura is used or refrigerated within 2 hours.

The following is outstanding:
- A scoop was stored within the dry storage rice bin with scoop handle in contact with rice. A bowl was stored partially immersed in salt. Items removed at time of inspection--ensure that scoops and/or bowls are not stored within food product OR scoops with purpose-built handles are used and handles are not stored in contact with food.
- Ventilation hood baffles and areas located behind and under the cook line equipment were observed with oil and debris. Ensure these areas are properly cleaned.
- Duct tape was observed on handle of reach in freezer and along edge of 2-door reach in cooler door. Ensure duct tape is removed as it cannot be adequately cleaned and sanitized.
- Spongy material is still in place at chest freezers. It was stated by the owner that the spongy material cannot be washed. Ensure spongy material is removed.

Follow-up for outstanding violations listed above and violations 302 and 209 (listed under "observed violations" section) to be conducted November 9, 2018. Contact the inspector if you have any questions or concerns.
