Comments

- All hand washing sinks in were properly supplied
- Low-temperature chemical dishwasher measured to have> 50 ppm chlorine residual at the dish surface, detected after rinse cycle
- All coolers were measured at 4C or colder
- Freezers measured at <-18 oC
- Hot Holding units >60 oC
- Food storage practices satisfactory - all food stored covered /labeled and off the ground.
- Good personal hygiene noted by staff ( busy time) -good

**Temperature records are on site, checked one month record some data are missing ( hot holding , dishwasher and surface sanitizer): Ensure to record monitoring data for hot holding units, dishwasher and surface sanitizer
**Discussed having enough FS Trained staff to have at least one person at each food prep area.
