Observation (CORRECTED DURING INSPECTION): Small volume of potentially hazardous foods (tuna salad, egg salad, deli meats) are being stored in the prep line cooler above 4 C ( food temperature about 9 C). Air temperature of this cooler is also above 4 C.
Corrective Action(s): Potentially hazardous foods stored in the prep line cooler have been discarded during inspection. Store all potentially hazardous foods (meats, eggs, seafood, fish, dairy, cheese, milk, cooked vegetables, etc.) at 4 C/40 F or colder and discard if the food temperature is above 4 C for more than 2 hours. Keep your food safety plans on site and follow the corrective actions. The large, upright 2 door cooler air flow is limited by the plastic and metal plans. Ensure adequate air flow in this cooler so all foods are at 4 C or colder.

Line and upright coolers - see above.
Pastry display cooler and milk cooler air temperatures are below 4 C.
Hot holding soups - temperatures are above 60 C.
Food safety plans - keep these on site and update as needed. Keep temperature records.
Reviewed quick cooling requirements. Cool using an ice water bath or in small volumes so that the food temperature is 60 - 20 C in 2 hours or less and 20 - 4 C in 4 hours or less.
Foods that are being reheated must be reheated quickly within 2 hours to 74 C.
Chili - provide a food safety plan - see above.
Domestic bleach is available for sanitizing food contact surfaces. Store wiping cloth in 1 tsp domestic bleach in 1 litre of water (100-200ppm chlorine) sanitizing solution.
Dishwasher today has a final sanitizing rinse (hot water reached 71 C/ 160 F or hotter inside of the machine and gauge was at 180 F or hotter.
Counter around front area double sink has been repaired. Keep this area clean.
