Provide pH test results for ketchup made in house - or store in the cooler at 4 C.
Coolers today are at 4 C or colder - good.
Hand washing sink has liquid soap and paper towels.
Quats sanitizer in labelled spray bottle - 200ppm detected.
Commercial low temp dishwasher - was not in use yet during inspection. After set up and priming, 50ppm chlorine detected.
Note: For the dishwasher, provide written instructions for staff and check chlorine concentration with a test strip before using. Keep records.
Back storage room - monitor for pests and keep area clean.
Follow your routine, written cleaning schedule.
