Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Observed dough flattener for naan bread on the prep table located on the main balcony kitchen with initial wrapping on. It had been used but not yet cleaned and/or sanitized. Observed remains of flour and dried up dough on the machine. It was not in use at the time of inspection. On the opposite side of the prep table, there were used cutting board and a knife that were not cleaned nor sanitized. All utensils and equipment must be cleaned and sanitized immediately
Correction: Required operator to remove the wrapping, clean and sanitize the dough machine. Cutting board and knife are to be brought into the kitchen for cleaning and sanitizing. Ensure that all utensils when not in use, are cleaned and sanitized.
