*General sanitation satisfactory. No pest issues observed during inspection.
*Scoops are stored outside of bulk bins. All food stored off the floor and packaged/sealed to protect against contamination.
*Proofers recently cleaned - ensure any residual chemical vapour is removed prior to using this equipment.
*Quat sanitizer available at 200ppm.
*Hand sinks equipped with warm water, liquid soap and paper towels.
*Clean-in-place equipment generally maintained in clean condition.
*Dough hooks, whips and other utensils stored in clean condition.
*Quat sanitizer dispenser at sink operational at 200ppm.
*Tongs are provided for bulk bakery item bins in customer area. Lids are in place over bins.
*Pan washer checked during inspection - final rinse temperature reached > 71 C at the pan level. This unit can now be used for cleaning and sanitizing baking trays, pans and other equipment.
*Walk-in freezer/cooler temperatures satisfactory.
