Observation:
Found mice droppings on the floor in the laundry room, behind the coolers, freezers and washing machine. Mice and their droppings carry diseases.
Corrective Action(s):
Immediately clean up the droppings by moving all equipment and racks away from the walls. Wash all surfaces that came into contact with the droppings, with hot soapy water and then sanitize with a hot bleach-water solution. Ensure cleaning of these areas are done on a regular basis. Place more traps in this room.

Observation:
The white, domestic fridge/freezer unit (in the laundry room) was 11C (and decreasing during the inspection) is not maintaining 4C at all times. The fridge was very full and this could be impeding cold air from circulating. Bacteria will multiply in the food and could cause patrons to become ill if they consume the food.
Corrective Action(s):
Immediately replace the fridege with one that can maintain temperatures below 4C at all times. Do not fill the fridge so full, so proper air circulation can occur.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -21C or colder; thermometers present; temps recorded.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- High temperature dishwasher was 77.4C, during the rinse cycle, at the plate's surface as per max/min thermometer.
- Bleach sanitizer in spray bottle had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups; and foods stored 6" off the floor on shelves and racks.
- No expired foods in use or for sale. FIFO rules being followed.
- Valid, FoodSafe certified staff present.
- General sanitation level is good.
- No signs pests found. Pest monitoring in place with glueboards and snap traps.
- Ensure all wiping cloths are laundering in a washing machine using hot water and bleach, and placed in a dryer on high heat to kill germs.

Banquet Kitchen
- Coolers below 4C; freezers -24C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- High temperature dishwasher was 75.1C, during the rinse cycle, at the plate's surface as per max/min thermometer.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups; and foods stored 6" off the floor on shelves and racks.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good.
- No signs pests found. Pest monitoring in place.

ACTION
1) Clean up the mice droppings in the laundry/storage room. Move all equipment away from walls so the floor behind and beneath can be accessed. All areas that came into contact shall be washed with hot, soapy water and then sanitized with a hot bleach-water solution (1 Tbsp bleach to 4L of hot water).
2) Mop up all pooling water (under dishwashers, sinks, ice machines; around hot water tanks and washing machines), empty all mop buckets, and empty all buckets catching water to eliminate all drinking water sources for mice.
3) Replace the upright, domestic fridge/freezer unit ASAP, in the laundry room, as it is not consistently keeping food 4C or colder.
