Observation (CORRECTED DURING INSPECTION): Hot foods delivered to the restaurant in the morning were not adequately cooled down before placing into the display cooler. Probed internal temperatures measured above 4C. These items were delivered to the restaurant at 10:30am and placed into the cooler approximately 1 hour later without monitoring temperature using a thermometer.
Corrective Action(s): Discussed with staff on site, all cooked foods that arrive hot must be adequately cooled down to 20C within 2 hours before placing into the cooler, otherwise the internal temperature will not cool down to 4C within 4 hours. You must use a probe-tip thermometer to verify the temperatures at the 2 hour mark and 4 hour mark.

Observation (CORRECTED DURING INSPECTION): 6 boxes of cooked meals stored in display cooler again measured above 4C. Probed internal temperatures ranged from 5.2C (pierogies) to 9.9C (butter chicken and rice).
Corrective Action(s): 6 boxes were discarded at time of inspection.

> Droppings have been removed. Areas were droppings were previously found are now cleaned and sanitized.
> Display cooler was serviced 2 days ago according to staff. Air temperature inside ranged from -2C to 2C.
> See above violations regarding food storage and cooling for hot foods.
