Comments

Items completed since initial inspection:
- Metal splash guard installed at the main handwashing station.
- Daily temperature log for most coolers/freezers available.
- Permit fee $25 for Feb-March 2022 paid.

Routine inspection:
- General sanitation needs improvement.
- All handwashing stations are supplied with hot/cold running water, soap, paper towels.
- High temperature dishwasher achieved 71C at the plate's level during the final rinse cycle.
- Surface sanitizer available in spray bottles at 100ppm chlorine concentration. Available in the main kitchen, bar, customer area.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity. A third party pest control company inspects monthly. Ensure to keep copies of all inspection reports on site for review during the next routine inspection.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers at < or = 4C
- All freezers at < or = -18C
- Hot holding units > 60C.
- Working thermometers available inside all coolers/freezers.

Recommendations: Store dry noodles at the customer area in larger bins with tight fitting lids. Store sauces with lids to prevent cross contamination.
