209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION):
Open tin cans of food being stored in the fridge. Tin cans will start rusting, this rust will get into the food and contaminate it.
Corrective Action(s):
Immediately transfer all food out of tin cans and store in food grade containers (stainless steel, hard plastic or glass) with tight fitting lids. During the inspection, staff transferred food into plastic food inserts.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
There is accumulated grease and food on the exhaust canopy and filters. The service sticker indicates a professionally cleaning and service should of been done in December 2023. Accumulation of food and grease on the filters and in the exhaust duct is a fire hazard.
Corrective Action(s):
Immediately schedule the grease hood and filters to be professionally cleaned and service this month.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation (CORRECTED DURING INSPECTION):
The original protective plastic covers the sides of the cooking station. The plastic has accumulated food and grease on it. This plastic is not cleanable and is only present to prevent the equipment from becoming scratched as it is transported to its final destination. The accumulated grease and food will attract pests.
Corrective Action(s):
Peel off the protective plastic cover and was the surfaces with hot, soapy water. During the inspection, staff peeled the plastic off.

Comments

Routine inspection completed:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C; and thermometers present
- Handsinks stocked w/liquid soap, paper towels, and running hot + cold water.
- Low temp. dishwasher had [Cl2] of 50ppm. Test strips present
- Bleach sanitizer in spray bottles + cloth buckets had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins below or separate from RTE foods; and foods stored 6" off the floor on shelves and racks.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good.
- No signs of pests. Lower Mainland Pest Company contracted to monitor for pests on a monthly basis.
- Valid FoodSafe Level 1 certified staff present.
- All ceiling light fixtures, in the kitchen, have working light bulbs. The light level meets the standard, and it is bright enough to clean and work safely.
- The floor in the kitchen is smooth, durable, level, sealed, & cleanable. The floor under the float grill has been repaired and is level, sealed, and cleanable.
- All surfaces of equipment, pipes, and shelves are made of a material that is durable, sealed and cleanable. All aluminum foil and non-food grade materials have been removed from these surfaces.
- The lowest shelves, of all storage racks, are 6" off the floor so a broom and/or mop can fit under the shelving unit to facilitate cleaning.
- The joint of the splash guard (dishwashing area + food prep sinks) has been sealed with silicone to stop dirty wash water dripping into prep sink.
- All violations from the previous inspection have been corrected. The conditions on the health permit have been rescinded.

ACTION
1) Call a professional company to clean and service the exhaust canopy and filters.
2) Peel off the protective plastic from the sides of the cooking equipment.
3) Do not store food in the original tin cans. Once you open the tin can, transfer and store food in food grade containers (stainless steel, hard plastic or glass) with lids.
