Observation (CORRECTED DURING INSPECTION): Cellphones were stored of work surfaces. Phone was in contact with a cut squash.
Corrective Action(s): Ensure personal phones are stored in a designated location to prevent potential contamination of foods and work surfaces. Squash was discarded at the time of inspection.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Men's washroom did not have any single use paper towels.
Corrective Action(s): Ensure handwash stations are accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. Single use paper towels were replaced at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Staff member observed touching a waste receptacle and did not change gloves before handling equipment.
Corrective Action(s): Ensure all staff adhere to good hand hygiene practices to prevent cross contamination. Review hand hygiene practices with all staff. Gloves were changed at the time of inspection.

Observation: Rodent droppings were observed in the kitchen. Facility is currently serviced by pest control on a monthly basis.
Corrective Action(s): Clean rodent droppings and sanitize affected areas. Monitor for pests and contact pest control operator if pest issues worsen.

-Walk-in cooler was at 3C.
-Walk-in freezer was at -17C.
-Sushi prep coolers (2) were at/or 4C (top and bottom).
-Kitchen prep coolers (2) were at 4C (top and bottom).
-Under counter cooler in back area was at 4C.
-Upright cooler in back area was at 3C.
-Upright cooler in the cook line area was at 4C.
-Kimchi cooler was at 2C
-Cold soup cooler was less than 0C.
-Sushi area chest freezer was at -12C.
-Chest freezer and upright freezer by the cook line were at -17C/-22C.
-Chest freezer in the back kitchen was at -15C.
-Chest freezer by the ice machine was at -18C.
-Hot holding was greater than 60C.
-Chicken cooked to greater than 74C.
-Cooked chicken was cooled rapidly and was at 4C in the insert.
-Sushi rice had a pH of 4.0.
-High temperature dishwasher had a final rinse of 74C on the dish surface on consecutive cycles (minimum of 71C required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer spray bottles labelled and tested at 100ppm (available in each food prep area).
-Mandolin slicers were found to be clean and sanitary. Slicers are disassembled for cleaning and sanitizing after each use.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination. Raw meats stored below and separately from ready-to-eat foods.
-Ice machine was found to be clean and sanitary. Scoop stored in a sanitary manner.
-Operator FOODSAFE Level 1 equivalent valid until April 28, 2028.
