Observation: Walk in cooler was broken at the time of the inspection. There were only dried food products stored inside.
Corrective Action(s): Fix the cooler and ensure that it maintains temperature < or = 4C at all times.

Comments

General sanitation is good.
- All other coolers = 4C. Ensure to store eggs at refrigeration temperature < or = 4C at ALL times.
- Walk in freezer = -18C
- All other freezers = -18C
- Hot/cold running water available.
- No signs of pest activity at the time of the inspection. The owner implements own pest control management system.
- Random food items (i.e. eggs, prepackaged dry foods, meats) checked for expiration dates, condition of packaging, and signs of deterioration. All in good condition.
- Dry storage area is organized. All food items must be kept at min 6inches (15cm) off the floor for better cleaning, air circulation, and preventing pest contamination. There is a small spill in the dry storage area. Clean the spillage.

Note: The operator is proposing to add a meat station in the back area. The operator must submit a floor plan with finishing schedule prior to constructing to receive Fraser Health approval.
