304 - Premises not free of pests [s. 26(a)]
Observation:
Found mice droppings in the front service area under the hand washing sink; on the lower shelves below the flat grill; on the floor in the walk-in-cooler; and on shelves of cupboards. Mice and their droppings carry diseases that could be transferred onto food.
Corrective Action(s):
1) Clean up all the mice droppings, and wash & sanitize all surfaces that came into contact with the droppings.
2) Block all openings and holes in walls and around pipes.
3) Hire a professional company to eliminate the mice.
4) Increase the frequency which detailed cleaning and hard to reach areas are cleaned.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation:
There is a large hole in the wall under the hand washing sink in the front service area. Pests can enter the premises through this hole.
Corrective Action(s):
1. Immediately block and seal the hole to prevent the entry of pests. Use metal plates or metal mesh (1/4" or smaller) to block the opening.
2. Remove all items off the floor and discard broken or unused items from the premises to discourage pests from living and breeding in the premises.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
Accumulation of food and grease debris found on walls and floor under and behind equipment and shelves/rack; on legs of equipment and racks; and on lower shelves or cupboards. This will attract and harbor pests.
Corrective Action(s):
Immediately complete a deep cleaning of the mentioned areas.
- Move equipment and racks away from walls so the walls and floors can be cleaned.
- Take all items off cupboards and racks to clean the shelves.
- Increase the frequencey these areas are being cleaned to help eliminate the mice problem.

Observation:
Staff wearing disposable gloves to complete more than one task. The gloves will contaminate food as they are not being changed.
Corrective Action(s):
Immediately retrain staff on the correct use of disposable gloves. Gloves shall only be used to complete one task, then they shall be thrown away and the hands washed BEFORE putting on a new pair.

Observation:
1) Floor tiles in the dishwashing area have lifted off the floor, food and water are getting under the tiles. The floor is no longer durable, smooth, level, sealed and cleanable. This will attract pests.
2) The grease trap, under the back prep table, is leaking. This will attract pests.
Corrective Action(s):
1) Repair/replace the floor tiles so the floor is durable, smooth, level, sealed and cleanable.

2) Immediately call a professional company to clean and service ALL the grease traps, and to repair or fix the leaking grease trap.

Comments

A routine inspection report completed:
- Coolers 4C or colder; freezers -18C or colder; hot holding units 60C; and thermometers present.
- Low temperature dishwasher had [Cl2] of 100ppm. Test strips present.
- Bleach sanitizer in spray bottles and cloth buckets had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; date coded; labelled; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on racks, shelves or pallets.
- No expired foods in use. FIFO rules being followed.
- General sanitation is adequate, but improvement needed in the mentioned areas.
- Exhaust canopy and filters clean. Next professional cleaning due in January 2024, as per service sticker.
- Valid, FoodSafe certified staff present, or staff possess an equivalent recognized certificate.

ACTION:
Sanitation level requires to be improved. Increase the frequency deep cleaning (hard to reach areas) and detailed cleaning is being done.
Call a professional company to clean, service, and fix ALL the grease traps to ensure they are not leaking/over-flowing and operating correctly.
Block all holes and openings in walls and/or around pipes to prevent pest entry.
Clean up mice dropping, and wash & sanitize all surfaces that came into contact with the droppings.
Contact a professional pest company to eliminate the mice. Follow all instructions and recommendations made by the pest company.
Retrain staff on the proper use of disposable gloves.
Repair the floor tiles in the dishwashing area.

**A follow-up inspection to occur on Dec. 13/23 to ensure cleaning is completed, the grease traps are working correctly, holes blocked, and mice droppings cleaned up.**
