General observations:
Coolers were 4 degrees Celsius or less.
Freezers were -18 degrees Celsius or less.
Food storage and display practices were good.
Organization of storage areas was good.
Staff hygiene and food handling practices appeared satisfactory.
Hand wash sink was stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
General sanitation was good.
Chemicals were stored in a safe manner.
Bleach sanitizer (spray bottle) had a chlorine concentration of 200ppm.
Discussed with operator about sanitizing the dining tables with the bleach sanitizer rather than the vinegar.
Also informed operator that should the bleach sanitizer cause damage to the dining tables, then a quats sanitizer will need to be used.
High temperature dishwasher had a final rinse temperature of at least 74.3 degrees Celsius as per min/max thermometer.
No signs of pests.
