Observation (CORRECTED DURING INSPECTION): 3 dirty cloths observed on prep table, no sanitizer observed at time of inspection.
Corrective Action(s): Cloths removed at time of inspection. 200 ppm chlorine residual sanitizing pail was produced and table was wiped with the a sanitized cloth.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Handwashing station in kitchen lacks soap in soap dispenser.
Corrective Action(s): Soap was replaced in the handwashing station. Ensure that the handwash station is stocked with soap at all times for proper handwashing.

304 - Premises not free of pests [s. 26(a)]
Observation: 1. Mouse droppings observed in equipment storage room and behind cook line.
2. One dead mouse found in trap underneath staircase, and one live mouse in trap next to dishwasher.
Corrective Action(s): Empty mouse traps. Seal all holes near the dishpit area and continue to monitor for rodent activity with professional pest control company.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Ventilation slats are greasy and have accumulated a large amount of burnt debris.
2. Area behind and under cook line contains saturated oils and grease.
3. Area underneath, behind, and around dishwasher and dishpit contain settled debris and oil.
Corrective Action(s): Degrease ventilation slats. Thoroughly clean the flooring and walls of the aforementioned areas and MAINTAIN the facility in good sanitary condition. Your facility is not always maintained in good sanitary condition, and this is a repeat violation that is leading to elevated amounts of rodent activity.

Further non-compliance in the future may result in the issuance of orders or tickets.

Comments

Routine inspection conducted. The following observations were made:

1. Temperatures
- Prep cooler at 3C. WARNING: Keep the lid closed when not in use! This has been discussed in the past. You must keep all potentially hazardous foods at 4C or cooler.
- Walk-in cooler at 3C
- Beverage cooler at 4C
- Rice hot-held at 60C or above in rice cooker

2. Hygiene and Sanitizing
- Handwash station stocked with hot/cold running water and paper towels (liquid soap added later - see violation code above)
- Low-temperature dishwasher sanitizes at final rinse cycle, releasing 50 ppm chlorine residual. NOTE: It took approximately 3-4 attempts to obtain 50 ppm chlorine residual; ensure that you run the low-temperature dishwasher and TEST it for chlorine residual each morning before it is used. Test strips were available from operator at time of inspection

3. Storage
- Food items stored at least 6" off floor
- Raw foods kept separate from vegetables and ready-to-eat foods
- Bulk storage items in containers with tight-fitting lids. Reminder: This is essential, as your facility currently has an active house mouse infestation.

4. Administrative
- Employees have FoodSafe 1 (Expiry: 2021)
- Permit posted and up-to-date

5. Pest Control
- Email report to public health inspector. Professional pest control company comes weekly to replace traps and to monitor for rodents
- Fly trap present and installed above hand wash station
