Observation (CORRECTED DURING INSPECTION): Kitchen meat slicer had significant buildup of food on the back side.

Observation: Mouse droppings found in the staff room behind the serving station's dishwasher. The restaurant has a monthly pest control contract, report reviewed during the inspection.
Corrective Action(s): Clean all droppings with a bleach solution. Continue to have a pest control company come onsite, and follow their recommendations.

Observation: Clean the following areas:
-The server's area along the floor and remove all garbage/ items no longer used.
-Inside the side dish cooler to remove food buildup.

Observation: Front server's cooler holding side dishes had an ambient temperature of 11 C. Several foods were probed and their internal temperature was between 9- 11 degrees Celsius.
Corrective Action(s): Repair the cooler so that it can maintain a temperature of 1-4 C within one week.

Comments

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C, with the exception of the cooler containing side dishes and salads.
All freezers were < -18 C.
The kitchen dishwasher reached 73 C at the plate level.
The server's dishwasher reached 72 C at the plate level. Ensure that both dishwashers are checked daily.
Bleach sanitizer solution measured at 100 ppm.
Fume hoods were clean.
General sanitation was satisfactory.
