Coolers are equipped with thermometers and are at correct temperature. Temperature records are being kept.
No hot holding during inspection.
Dishwasher - sani-cycle and hot dry are used.
Chlorine bleach - measured at 100ppm - good.
No menu items with raw eggs (eg. mayonnaise or caesar salad dressing).
Discussed raw flour. Flour is cooked.
