302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): A) No chlorine detected in the low-temp dishwashing machine at time of inspection. Operator replaced the chlorine chemical with a fresh pail while on-site. Chlorine residual is now at 50+ppm.
B) Sanitizer spray bottles are being filled with a non food-grade chemical (Pine cleaner). Spray bottles were emptied and replaced with a bleach & water solution at 100+ppm concentration.
Corrective Action(s): A) Check all 3 chemical levels (red-detergent, blue-rinse aid, & yellow-sanitizer) before first-use of the dishwasher every day. Obtain test papers from the dishwasher company to confirm chlorine concentration.
B) Ensure to only use food-grade sanitizer solutions on food-contact surfaces. A bleach sanitizer solution can be made by mixing 1 ounce of bleach with 1 gallon of water.

Observation (CORRECTED DURING INSPECTION): Hand-washing station in the bar area lacks hand-soap and paper towels.
Corrective Action(s): Operator replaced the soap and paper towels at time of inspection. Ensure hand-washing stations are always supplied with soap and paper towels.
