Observation (CORRECTED DURING INSPECTION): Multiple potentially hazardous foods stored at room temperature: semi-cooked chopped pork 11C, green peppers 11C, onions 8C, broccoli 12C, teriyaki sauce 20C, garlic 7C. Pork was discarded. Other items were moved into walk-in cooler. Discussed with operator that foods should be discarded once they have been at room temperature for a cumulative of 2 hours.

Observation (CORRECTED DURING INSPECTION): -Multple food containers were stacked on top the other with the bottom in directly touching the food (areas noted: undercounter cooler, sliding door cooler, metal shelving rack in front of sliding door cooler. Containers were unstacked and a cover was provided for each. Foods must have a cooking step.
-Rice spatula stored in water at room temperature. Operator put ice in at time of inspection.

Observation (CORRECTED DURING INSPECTION): Bucket of sanitizer (with cloths) at 50ppm chlorine, used to clean prep counter. Chlorine sanitizer must be at 100ppm. Instructed staff to add more bleach. Retested at 100ppm.

Observation (CORRECTED DURING INSPECTION): -Multiple food items were not covered (areas noted: sliding door cooler, stainless steel freezer, dry foods stored on bottom shelf (flour, bread crumbs)). Staff provided a cover for foods at time of inspection.
-Small container of oil found on the floor next to the sliding door cooler. Staff moved it to the counter as soon as notified. Staff was instructed to clean the bottom of the container first.
-Staff moved a bowl with raw meat juices across the counter above bowls of uncovered cooked veggies. Concerned about raw meat dripping onto cooked vegetables. Discussed with operator the best practice to prevent potential cross contamination. Vegetables must undergo a secondary cooking step.

Observation: Grease spill found near the deep fryer.
Corrective Action(s): Degrease, clean and sanitize the floor area around the deep fryer.

Observation: The following areas require cleaning:
1. microwave
2. cooler handles (special attention to surfaces underneath)
3. fume hood had grease build-up and droplets of grease were noted along the front edge
4. sliding door cooler glass door and handles
5. metal shelving rack across from sliding door cooler (special attention to the bottom)
6. Bottome of freezer (food debris found)
7. Clean the grease spill on the floor areas around the fryer
Corrective Action(s): Clean (and degrease) and sanitize the areas noted above.
