OBSERVATION: QUATS Sanitizer bucket solution measured at 100ppm.
CORRECTIVE ACTION(S): Ensure QUATS bucket sanitizer solution is measured using a test strip to achieve a concentration of 200ppm.
*Change solution as often as possible to ensure food contact surface are properly sanitized.

OBSERVATION: -Water running in handsink, next to cooking line noted too hot for handwashing.
CORRECTIVE ACTION(S): -Though the sink next to the handsink has adequate hot and cold running water, high water temperature of the handsink must be corrected to enable kitchen staff members was their hands properly as needed. Access to other handsinks in use in the kitchen at the main time is satisfactory.

OBSERVATION: (1) Walk in freezer condensation unit observed to be leaking water.
(2)*Handsink next to cooking line noted with too hot water temperature.
CORRECTIVE ACTION: (1) Have walk in freezer condensation unit fix to prevent accumulation of moisture in the freezer

GENERAL OBSERVATION & COMMENTS
*The following Cold holding temperatures were measured:
-Walkin Cooler 0 deg. C
-Walkin Freezer -18.0 deg. C
-Under Counter Cooler -0 deg. C
-Stainless Steel upright beverage cooler -4.0 deg .C
-Beverage Cooler in living room (up stairs) -4.0 deg. C freezer -20 deg. C

*High temp. dishwashing achieving 72.9 deg. C @ plate and 90 deg. C @ the guage.
*Dough mixer noted in a sanitary condition at the time of inspection
*All hand wash station stocked with liquid soap, paper towel, hot & cold running water.
*Quats sanitizer at the dispenser noted at 200ppm.
*All kitchen staff members present at the time of visit had foodsafe Level 1
*General Sanitation is satisfactory
*Temperature log is maintained for all cold holding units
*No signs of pest at the time of visit
NOTE: New door swipes installed at the back door entrance, walkin freezer and walkin cooler.
-Food items stored in pest proof containers with lid to protect food from contamination and less attraction for pests
-ORKIN Pest Control Company visits monthly. However, monthly reports are unavailable for review.
*Ensure monthly reports from pest Company is documented for review and referrals upon request.


COVID-19 SAFETY PRECAUTIONS.
-Dinning is currently closed to residents. However in preparation to reopen dinning first week August, the following precautions are in place.
-Only half capacity of the residence to dine at a time.
-Dinning tables are spread 2 metres from each other with 2 resident's chair per table
-plexi glass shields are being installed on each table (installation still in progress at time of visit).
-Hand sanitizers available at different location in facility
-Use of face mask and temperature checks required prior to entrance.
