Observation: Wine production room does not have paper towel in dispenser at the 1 sink also used as an equipment washing sink.
There is hand soap and paper towel in dispenser in the washrooms.
Corrective Action(s): Please install paper towel dispenser in wine production room and use this as a designated hand sink before touching product or testing product.

Observation: Dishwasher for washing glasses is not heating to >71C during final rinse. At 68C or lower after 3-4 cycles.
Corrective Action(s): Please fix dishwasher so temperature reaching plate surfaces is >71C. At the gauge, reading can be around 82C for final rinse.
Use dishwasher in kitchen or sanitize with 200ppm Quat in the 2 comp sink in the meantime.

Hand wash sinks are supplied with soap and paper towel in dispensers.
Dishwasher in the kitchen >71C.
Kitchen prep areas are generally clean.
Fly screen for kitchen was purchased by operator and readily available for installation. Thank you.

One jar of canned food has lid popped up and will need to be returned. Please be sure to check stock upon receiving.

Freezer had items on top and no temperature was taken.
White fridge <4C.

No production room file. Walk through of the production room was conducted.
Production room is generally clean and free from clutter or residue.
No pests or signs of pests noted at the time of inspection.
