206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Cooked rice stored in the hot holding plate measured with any internal temperature of 52C. The temperature setting observed to be set at around 50C.
Corrective Action(s): Increase the temperature setting to above 60C. Operator reheated the rice to 74C and added it to the adjusted hot holding plate. Hot food must be hot held at 60C and above at all times.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): 1. Operator grabbed a bucket with food that was stored on the floor and left the bucket on the food prep table.
2. Dough mixer arm placed in dishwasher observed with pieces of dough.
Corrective Action(s): 1. Do not put any dirty side of the bucket on the food contact surfaces. Food contact surfaces must be only used for food preparation and kept clean. Clean and sanitize the food prep table immediately.
2. Ensure food debris are scrapped off from equipment and utensils before washing them with dishwasher.

Observation (CORRECTED DURING INSPECTION): Quats spray bottle measured with 0 ppm quats solution. Only one spray bottle available on site. Operator stated the solution was being changed every couple of days.
Corrective Action(s): Refill the bottle with fresh 200-400 ppm quats sanitizer and sanitize all food contact surfaces. Quats solution in the spray bottle must be changed at least daily to ensure concentration is maintained at 200-400 ppm. A separate sanitizing spray bottle must be available for front and back kitchen.

Observation (CORRECTED DURING INSPECTION): Hand washing station in the kitchen was blocked a bag of fresh vegetables stored in the basin.
Corrective Action(s): Remove the bag of vegetables immediately. Hand washing station must be free of obstructions at all times to facilitate hand washing.

Observation: Raw marinated meats were stored in an insert in the walk-in cooler on top of eggplants and lemons. Meat juices not dripping on to the lower shelf food.
Corrective Action(s): Move the raw meats to the bottom shelf away from vegetables and ready to eat food. Correct by: immediately.

- Stand-up freezers functional.

- No pest activities observed at the time.
- General sanitation satisfactory.
