2) Sliced limes stored at room temperature.
Corrective Action(s):
1) - Move all potentially hazardous foods to an operational cooler
- Call your repair technician to have your cooler serviced
- Do not use this cooler until it can achieve and maintain 4C/40F

2) Store your sliced limes at 4C after they have been sliced. Staff moved limes to cooler at the time of inspection.
