> Sandwich prep coolers (front line): produce and sauce side is measuring 4C or below, cheese and meats side is measuring slightly above 4C.
> Probed chicken inserts measured 4.9 C and 4.7C. Staff indicate that insert items are typically used up within 2 hours.
> Temperature display on the unit at time of inspection read 42F (5.5C)*
> Sandwich prep cooler (drive-thru): 4C
> Open display cooler: 1C
> Small beverage cooler by drive thru: 1C
> Hot held items (meatballs, soups): at or above 60C**

*Ensure all refrigeration units are regularly serviced.
**Frequently stir hot held items. And do not fill sandwich cooler inserts past the fill line, fill only what can be used WITHIN 2 HOURS.

General:
> Running hot and cold water is available.
> Handsinks are fully supplied with liquid soap and paper towels.
> Observed staff practicing proper hand hygiene.
> 200ppm QUATS sanitizer is available at warewashing sink and in sanitizer buckets.
