Make sure steam tables set up in a manner that will keep ALL foods above 60 C as discussed. 1) Make sure water is in direct contact with all inserts. 2) Make sure steam can keep inserts at proper 60 C by making sure the steam is trapped within the water basin (secondary coverage or such that there is no air gaps for steam to escape). Always verify temperatures with digital probe thermometer in these units.

Pics taken of dishpit.

Cooling units all less than 4 C.
Freezers below -18 C.
Hot holding units above 60 C ** Make sure food reflects these temperatures with checks as noted above.
Sani-buckets all over. Good. Sink and surface at acceptable range.
