Routine Inspection:
- All hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Display coolers maintained at 4 degrees Celsius.
Walk-in cooler = 2.1 degrees Celsius.
Walk-in freezer = -18.6 degrees Celsius.
Stand-up cooler = 3.4 degrees Celsius.
Stand-up freezer = -21.4 degrees Celsius.
Steam tables for hot holding maintained above 60 degrees Celsius.
Juice/milk display cooler = 0.6 degrees Celsius.
Salad/sandwich display cooler = 2.4 degrees Celsius.
Domestic freezer in bake room = -18 degrees Celsius.
Domestic cooler in bake room = 4 degrees Celsius.
- Prep sinks equipped with hot/cold running water.
- Equipment, utensils and dishes stored in a sanitary manner.
- Students observed to be checking temperatures of food with a probe thermometer - very good.
- Meat slicer clean.
- General food storage practices good:
Foods covered and protected from contamination.
Foods stored at least 15 cm (6 inches off the floor).
Cold, freezer and dry storage organized.
No dented cans observed.
Bulk foods stored in pest proof containers.
- Concentration of QUATs sanitizer in all spray bottles = 200 ppm.
- High temperature dishwasher sanitizing with 74.7 degrees Celsius at dish level (151F at the wash cycle, 185F at the final rinse cycle).
- Ice machine maintained in a sanitary condition. Ice scoop for ice machine stored in designated container.
- Premises well lit.
- Pest control in place. No signs of pest activity at the time of inspection.
