Observation (CORRECTED DURING INSPECTION): Two mouldy cauliflower heads observed in the smaller walk in cooler.
Corrective Action(s): Discarded. Ensure all food is not contaminated.

Observation (CORRECTED DURING INSPECTION): Cooked rice observed ready to be placed in the walk in cooler covered with saran wrap. Internal food product temperature was 42 degrees C.
Corrective Action(s): Discarded rice. To cool quickly use shallow containers or pans. Cool from 60 to 20 degrees C in 2 hours then from 20 to 4 degrees C in 4 hours.

Observation (CORRECTED DURING INSPECTION):
- Plastic pizza pan separators stored in bucket by the dough preparation station. Pan separators observed to be soiled with food debris and grease accumulations.
- Observed ice wand on the floor in the walk in freezer.
- Food containers and utensils observed stored on the floor in the dishwashing area.
Corrective Action(s):
- Clean and sanitize all plastic pizza pan separators. Discontinue use of wooden sticks used to separate pizza pans.
- Do not store food containers and food utensils on the floor.

Corrective Action(s): Service the smaller walk in cooler door handle. Service the hand sink along the left side of cooking line foot pedals. Ensure all equipment is in good working order. Correct by March 27, 2017.
