Ice cream made on site with ingredients from approved source (pasteurized egg/milk base).

Hand washing stations in front service area and staff washroom have liquid soap and paper towels in dispensers.
Premises is clean and well organized.
Double sink and dishwasher are available in front area.
Wiping cloths are soaked in a sanitizing solution of 200ppm chlorine - tested today with test strip - good. Make fresh solution frequently. Dipper well is also used for scoops.
Wash and sanitize scoops every 4 hours. Ice cream making equipment is washed, rinsed, sanitized and air dried as per directions on the chemical bottle labelled.
Dishwasher has a final sanitizing rinse of 71 C + as measured inside of the machine (71 C/ 165 F or hotter is required and should be 82 C at gauge on machine) - good.
Operator has a waterproof, min/max dishwasher thermometer to measure inside temperature of dishwasher - good.
Operator has udated his Food Safe certificate - good until 2024.
