Observation: 1) The sandwich prep cooler was not working properly and food was stored on ice as a temporary measure. The operator stated that it is going to be replaced. Ensure that it will be replaced with a similar size, commercial cooler.
2) The stand up 2 door freezer in the kitchen was not working properly (it was turned off during the inspection).
Corrective Action(s): Repair/ replace both within two weeks. The cooler should be < 4 C and the freezer should be < -18 C.

Comments

-Ensure that all coolers are checked and recorded on the temperature records. It was noted that the sandwich prep cooler was not included in the temperature records.

Hand sinks were supplied with hot and cold water, soap and paper towels.
The walk in cooler was < 4 C.
The two storage freezers were < -18 C.
Hot held foods were > 60 C.
The dishwasher had 100 ppm chlorine. Check daily.
No evidence of pests. Pest control report available for review.
General sanitation was satisfactory.
