Observation (CORRECTED DURING INSPECTION): Pizza on display had an internal temperature of 35C. Al hot potentially hazardous foods must either be held greater than 60C or be discarded after 2 hours when held within the temperature range between 4C to 60C.
Operator must do either of the following:
1. Ensure the hot holding unit can keep all pizza greater than 60C.
2. Implement a time tracking system to monitor pizza held within the temperature range of 4C to 60C.

This has been a repeated issue.

Comments

Routine inspection conducted and the following were noted:
Walk-in and pizza prep cooler at 4C. Ensure to monitor all cooler units within an accurate thermometer daily.
Freezer unit at -10C.
3 compartment sink available.
100ppm chlorine (bleach) solution available. Ensure to store all wiping rags in the sanitizing container when they are not in use.
General sanitation satisfactory.
No pest activity noted.
Food items stored at least 6 inches off the ground.
Water discharge pipe from the condenser unit is no longer drained into the 3 compartment sink. Plumbing has been reconfigured to drained into the mop sink.
