Observation: Accumulation of food debris observed in the following areas:
- Cook line countertops and surrounding surfaces. These are primary work areas and should be completely cleaned from edge to edge surface to surface at the end of the day. There are areas that are not getting proper daily cleaning and are building up making daily cleaning more difficult.
- Floor in cook line, under counters at legs or wheels.
- Walk-in cooler floor.
- Under stainless steel counter at dish pit.
Corrective Action(s): Make sure staff, including nightly cleaning staff perform proper and complete clean up of above noted areas and that staff are following scheduled cleaning in sanitation plan.
**Any spills or accidental messes must be cleaned up immediately, and staff must not wait for scheduled cleaning to perform task.
**Move equipment to perform cleaning if necessary.

Comments

Make sure identified work is addressed and workstations maintained as discussed. This will be reviewed at next scheduled inspection.

Cooling units all less than 4 C.
Hot holding units above 60 C.
Freezers below -18 C.
Hand wash stations all properly stocked.
Quats in sani-buckets at 200 ppm. Main feed the same.

**Significant improvement to fruit fly population very few noted at time of inspection. The key to controlling the populations will be keeping the dish pit area clean and as dry as possible and the mop sink area the same. Discussed cleaning strategies with operator.
