Observation (CORRECTED DURING INSPECTION): No surface sanitizer available to sanitize food contact surfaces at the time of the inspection.
Corrective Action(s): Prepare surface sanitizer at 100ppm chlorine concentration. This must be available at all times to sanitize equipment and other food contact surfaces.

Observation: 1) Significant build up of grease and food debris on the conveyer of the pizza oven.
2) Food debris in the pizza pan bin.
3) Dirt and grease in the following areas:
- around the dough mixer
- underneath the two compartment sink
Corrective Action(s): Clean the areas noted above. Implement a regular cleaning schedule.

Observation: Chest freezer being used a prep table.
Corrective Action(s): Obtain an additional stainless steel prep table for food preparation as you are lacking prep space. You cannot use the chest freezer as food prep area.

Observation: 1) Prep cooler measured at 10C.
2) Leaky faucet at the handwashing station.
Corrective Action(s): 1) Fix the cooler. Ensure that the cooler is maintained at < or = 4C at all times. Do not store any cold potentially hazardous food items inside this cooler until cooler maintains temperature < or = 4C.
2) Fix the leaky faucet.

- All handwashing stations supplied with cold/hot running water, soap, and paper towels.
- Two compartment sinks available for manual dishwashing. Sanitizer available at 100ppm chlorine concentration.
- Dry storage area has adequate space and wire racks. Dry food items stored min 15cm (6inches) off the floor.
- No signs of pest activity at the time of the inspection.
