Routine inspection conducted.

Note - At the time of inspection, access to some areas in the back kitchen was restricted as the facility is in process of decommissioning the old equipment. Manager stated that the equipment was not used or required for daily food operation. Once the old equipment has been removed, facility may add new equipment and will notify district EHO regarding the proposed plan.

Findings:

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- All walk in coolers were recorded at or below 4C except:
Inventory cooler no. 5
Walk in cooler no. 6
- No food was observed in these two coolers. Manager stated that no.6 cooler will be serviced today and no. 5 was fixed yesterday but they are keeping the door of this cooler open to let it air out. Food will be stored in the coolers once the ambient temperature is maintained at or below 4C.
- Stand up and reach in coolers recorded below 4C
- Walk in freezers (x2) and 1 stand up freezer recorded below -18C
- Temperature logs were posted at the door of each refrigeration unit and found up to date.

Storage:
- 3x dry storage rooms maintained in good sanitary condition.
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Food products were properly labelled and date/time tracked.
- Chemicals and cleaners were stored in a designated area.

Sanitation & Maintenance:
- All hand wash stations were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Prep sinks, 2-compartment and 3-compartment dishwashing sinks (x2) had supply of both hot and cold water.
- 3 high temp dishwashing machines in place. Temperature recorded on dish surface during final rinse cycle: 72C, 71C and 76C.
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink and 2-compartment sink.
- Utensils and tongs were found in sanitary condition.
- Ice machine had no signs of build up and scoop was stored outside in a sanitary manner.
- Manager stated that professional pest control company conducts weekly checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Manager confirmed that all staff onsite has valid FS Level 1 or equivalent.
