Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation: Both hand sinks were dry at the time of inspection.
Front server hand sink was plugged and needs repair. Cook said this was not being used at all.
Possibly using the 3-comp sink to wash hands but this was not observed during the inspection.
Operator was wearing gloves during inspection and going between using cell phone and food prep without washing hands or changing gloves.
Operator said she does change her gloves and wash hands but this was not observed.
Correction: Please wash hands between changing tasks. If gloves must be warn, please ensure you wash hands and change gloves between different tasks.
Use designated hand sinks to wash hands especially after handling meats and before preparing salads.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Cook does not use bleach sanitizer or other sanitizer for surfaces.
Correction: Please use sanitizer and keep some at prep tables for sanitizing prep surfaces.

Hand wash station is fixed at the front (near the freezer) but does not appear to be in use.
Other hand wash station in kitchen is well supplied with soap and paper towel and is in use.
Operator using gloves. Operator aware to wash hands and then don on gloves, especially after handling cash interactions and before food prep.
Powdered bleach used for sanitizing, operator showed PHI they take the whole cutting board and submerge in sink with powdered bleach. Please be sure to submerge using both sides if using this method.
Operator describes she uses the bleach powder for scrubbing and then rinses off according to directions - this method cannot be tested with test strips at this time.
