Observation: Frozen wild salmon to be consumed raw is being stored at about -14C.
Correction: Supplier may have previously frozen salmon (verify) or maintain the freezer at -20C or colder and keep salmon in this freezer for at least 7 days at -20C. Freezer was adjusted during the inspection and is now at - 18C. Check again to verify it is keeping salmon at - 20 C. Provide a copy of information from supplier regarding freezing.
Comments

Letter from fish supplier is available (dated Feb. 2020) which states that seafood/sashimi items have been frozen at -20C for more than 7 days. This applies to salmon (and tuna) - good.
