Observation: Observed dropping in the corner of back storage area and along the wall underneath storage shelves. When inquired operator indicated that the cleaning is performed monthly.
Corrective Action(s): Required operator to remove the droppings for sanitary reasons as well as for pest management. Ensure to check for any droppings more frequently.

Observation (CORRECTED DURING INSPECTION): Observed cardboard used on different places:
-On top of grease trap
-On equipment that is not currently being used
-Under waffle machines
*Cardboard is not a suitable food contact surface as they can harbour pathogens. It is extremely difficult to properly clean and sanitize surfaces that are not impervious to water and durable.
Corrective Action(s): Required operator to remove all cardboard and perform proper cleaning and sanitizing. Operator removed all cardboard at the time of inspection.

Overall sanitation is satisfactory
Hand washing stations stocked with liquid soap and paper towel
Hot cold running water available at all sinks
Low temperature dishwasher in good working order; detected 50 ppm of residual chlorine at plate level after final rinse cycle
All coolers at 4 C or lower; all freezers at -18 C or lower; all hot holding units at 60 C or higher
QUAT sanitizer available throughout facility; sanitizer contained 200 ppm of QUATs. Wiping cloths seemed old and damaged with long threads. Required operator to change them to new sets to facilitate easier cleaning.
Ice machines maintained in sanitary condition
Washroom maintained in sanitary condition
Observed staff frequently washing hands, after each task.
Organization in the back storage is acceptable; all items in pest proof items.
Dipper well in good working water; continuous water flow noted at the time of inspection.
Noted chemical bottles stored on prep table. Ensure to store them away from food contact surfaces and foods when being stored.
