Observation: Rodent droppings found behind BOTH freezer units and under all ice cream dispensers in back kitchen area.

Corrective Action(s): Clean and sanitize area. Wet down droppings with a 200ppm Chlorine solution. Remove droppings and sanitize floor with 200ppm Chlorine solution.
NOTE: obtain additional TIN CATS from pest control technician as only 2 were found at facility during inspection. Sticky traps and snap traps get moved around and "snapped" and are no longer as effective.

Observation: Both doors to kitchen area require a door skirt to be "tight fitting" so as to prevent the entry of pests into the kitchen area. Droppings and urine staining was observed directly next to back door indicating a point of entry. .

Observation: Staff on duty are required to have FOODSAFE LEVEL ONE when operator is not present. Staff today did not have FOODSAFE LEVEL ONE.

Corrective Action(s): Complete FOODSAFE LEVEL ONE training for any staff requiring the training.

- Pest control program in place
- Handsinks adequately supplied
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Three compartment sink method in use and at concentrations of greater than or equal to 200ppm Chlorine
- Three functional sink plugs available for use
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine
- Ice machine and scoop in good sanitary condition
- Light covers in place
- Cooler handles and seals in good sanitary condition

NOTE: soap supply is getting low. Ensure adequate supply of soap at ALL handsinks.

***NOTE: FOODSAFE Certification – Any staff Certified prior to July 29, 2013 must re-take FOODSAFE as it expires on July 29, 2018. FOODSAFE will now expire after 5 years.
