Observation (CORRECTED DURING INSPECTION): Insert of cooked chicken from the previous night was at 10C. Chicken was shaved off the cone and placed in the upright cooler in a full plastic insert.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and or the formation of toxins. Meat was discarded at the time of inspection. To rapid cool foods, items can be placed in the walk-in freezer for rapid cooling or small amounts of food can be placed in the inserts (approximately 1/3 full and loose to allow air flow).

Comments

-Follow-up inspection to student inspection conducted August 3, 2022.
-Cutting boards were found to be clean and sanitary. Ensure all equipment is cleaned and sanitized after each use.
-Ice machine was found to be clean and sanitary at the time of inspection. Ensure the ice machine is cleaned and sanitized on a regular basis.
-Handwash station in the front area was accessible by staff. Garbage container in front of the handwash station did not impede staff access to the handwash station.
-Did not observe any concerns with staff hand hygiene at the time of inspection.
-Pest control has been on-site. Drains were foamed and fruit fly activity has decreased significantly.
-Cooler units were equipped with accurate thermometers.
