Observation: Accumulation of food debris and grease build-up observed from floors underneath large equipment throughout the kitchen. Storage shelves require more frequent cleaning.
Corrective Action(s): Ensure to have all floors and storage shelves cleaned as discussed at this time. Remove or cover wood used for the back storage shelves.

Routine inspection conducted:

- Handwashing station adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at 4'C; freezers operating at/below -18'C.
- 200ppm chlorine solution available in a spray bottle and in buckets to hold wiping rags.
- High temperature dishwasher achieved 71.2'C at the plate level after final rinse.
NOTE: Dishwasher has been replaced recently (like-to-like model).
- General food storage practice satisfactory.
NOTE: Ensure to have all opened cans of food transferred to food grade containers.
- Washroom satisfactory. Dry storage room satisfactory.

General sanitation level requires improvement. Refer to above. No signature required due to Covid-19.
