Observation (CORRECTED DURING INSPECTION):
1) Sanitizer made only at the start of inspection.
2) Soiled cup rinsed in sink, then placed in dishrack.
3) Dishwasher run several times, reached a max of 67C. Machine leaks water.
Corrective Action(s):
1) Sanitizer must be available at ALL TIMES.
2) Do not just rinse soiled items; these need to be washed, rinsed and sanitized.
3) Operator fixed dishwasher - drain plug was missing at bottom of machine.
