Observation (CORRECTED DURING INSPECTION): Internal food product temperatures of various food products in inserts at the preparation cooler 12-15 degrees C. Lower section ambient air temperature ~ 15 degrees C.
Corrective Action(s): Operator and head chef relocated all food products back into the walk in cooler. Ensure all cold potentially hazardous foods are stored at or below 4 degrees C.

Observation: 3 mice observed caught on glue traps in the storage room. Droppings also observed in the corned underneath the wired shelving unit by the door.
Corrective Action(s): Remove the dead mice and thoroughly clean and sanitize underneath all the wired shelving units. Correct immediately. Continue to have pest control company monitor the rodent issue and take necessary corrective actions.

Observation: Observed a gap between the door and floor for the back door.
Corrective Action(s): Operator to change the door sweep for the back door. Correct by January 21, 2019. Ensure the premise is secure to prevent the entrance of pests.
