Observation (CORRECTED DURING INSPECTION): (Repeated violation) Internal temperature of pizza slices in the hot holding unit was measured at 54.2C. Staff cited these slices were prepared >2 hours ago. Products discarded at this time.

2. Observed a container of cooked pasta without a cover in the pizza assembling cooler.
Corrective Action(s): 1. Ensure opened food packaging is re-sealed or contents are transferred to a food grade container with tight fitting lid. Correct this by: May 17, 2022.
2. Provide a cover to the pasta container. Correct this by: immediately.
