- 100ppm chlorine residual detected at the end of sanitizing cycle in the low temp dishwasher
- 12.5ppm iodine residual detected at the end of sanitizing cycle in the glasswasher
- Sanitizer concentration is monitored & recorded
- Coolers in the kitchen & bar measured <4C
- Freezers in the kitchen measured <-18C
- Raw animal products stored on the bottom shelf in the walk-in cooler
