Observation (CORRECTED DURING INSPECTION): Kitchen knives are being stored in containers containing soil/debris
Corrective Action(s): Thoroughly clean and sanitize the kitchen knives and the storage containers. These items must be maintained in a clean and sanitary condition at all times.

Observation (CORRECTED DURING INSPECTION): Multiple wiping cloths are being used in the kitchen without the use of a food-grade sanitizer solution.
Corrective Action(s): Staff prepared sanitizer solution at time of inspection. Wiping cloths must be stored in the sanitizer solution when not being actively used. Sanitizer solution must be available at all times in the kitchen.

Observation (CORRECTED DURING INSPECTION): Paper towel dispenser at the hand-washing station in the kitchen was empty at time of inspection.
Corrective Action(s): Paper towel dispenser was refilled while on-site. Ensure to keep all hand-washing stations stocked with soap and paper towels at all times.

Observation (CORRECTED DURING INSPECTION): 1) Multiple food items being stored in the walk-in cooler without covers/lids to protect against potential contamination
2) Two bins of dry goods (sugar, flour) in the storage room were uncovered at time of inspection (lids were open).
Corrective Action(s): Ensure all food items are stored in closed containers to protect against potential contamination.

Observation: Rodent (mouse) droppings observed in the back storage room and in sections of the kitchen (eg. near dishwasher).
Numerous mouse/insect sticky traps observed in storage areas and throughout the kitchen.
Corrective Action(s): Unable to determine whether rodent droppings are fresh or old. Staff indicate that they receive regular visits from a pest control company hired by the Strata, but did not have invoices/reports from the last visit. Contact the pest control company to perform a thorough assessment of the food premises to determine whether the rodent droppings are from an active infestation. Ensure to follow recommendations of the pest control technician to remediate/eliminate the pest activity.

Observation: Numerous instances of food debris, spills, and residues observed on surfaces throughout the kitchen.
Corrective Action(s): Thoroughly clean and sanitize the entire kitchen, cleaning and removing all food debris, spills, residues, and soil on surfaces.
Recommend operator obtain services from a professional cleaning company to perform a deep-clean of the entire kitchen.

Observation: Overall sanitation level in the kitchen is poor. Floors, walls, and other surfaces throughout the kitchen are soiled with food debris, spills, and residues. Food debris/residues are attractants to pests and rodents.
Corrective Action(s): Perform a thorough deep-cleaning of the kitchen, including floors, walls, coving, fixed equipment, exposed pipes, tables, etc. All surfaces must be cleaned and sanitized to remove all visible debris and residues.

Observation: Numerous items being stored in the back storage room (vacuum cleaner, large mixer, old equipment, etc) that are no longer used in the premises.
