Observation (CORRECTED DURING INSPECTION): A bleach sanitizer solution was not prepared at the time of the inspection.
Corrective Action(s): Ensure that a bleach sanitizer solution ( 1 tsp/ liter) is always available for sanitizing kitchen surfaces and that a cloth is stored in the bucket for use.

-Around and underneath the fryers to remove grease and food debris buildup.
-The kitchen ceiling tiles.
Corrective Action(s): Ensure that the area around the fryers is cleaned as soon as possible and the ceiling tiles are cleaned within 2 weeks.

Comments

-Server's area freezer not in use and will be removed.
All coolers were < 4 C.
Hot held foods were > 60 C.
The dishwasher final rinse cycle reached 71 C at the plate level.
Hand sinks supplied with hot and cold water, soap and paper towels.
No evidence of pests, pest control comes on site monthly.
