Went over manual dishwashing instructions with operator, adequate knowledge demonstrated, test strips available on-site.
Sanitizer concentration borderline adequate, increase concentration of chlorine sanitizer to 100 - 200 ppm
Handsink in washroom and counter area well equipped with handsoap, paper towel and hot/cold water
General sanitation is maintained
No sign of pest activity observed
