Observation (CORRECTED DURING INSPECTION): No chlorine detected during final rinse cycle of the dishwasher even after replacing the sanitizer bucket. Wash temperature registered 38-40 C.
Corrective Action(s): Repair or adjust the dishwasher so that it dispenses chlorine at the plate surface @ 50 ppm-100 ppm. Ensure that wash cycle temperature is 50-60 degrees C. ( Immediately). In the mean time, all dishes must be sanitized manually by soaking in 100 ppm chlorine solution ( 1 oz bleach per gallon of water).

Observation: Mice droppings noticed behind the onion storage containers as well as underneath the sliding door cooler. According to the owner-no current mice issue, the droppings are old and did not get cleaned
Corrective Action(s): Check for mice droppings underneath all coolers, freezers, bar cooler, cabinets and in dry storage areas. Clean and disinfect the floors with hot water and bleach. Monitor for evidence of any fresh mice activity. If the issue persists, hire a licensed pest control company for mice monitoring and control ( By August 19, 2021).

Observation: Under couter cooler across from the woks registered 7-8 degree C.
Corrective Action(s): Repair or adjust the cooler so that it maintains all foods at 4 C or below. Keep the thermometer in the front of the cooler so that it is easy to monitor cooler temperature ( By August 18, 2021). If cooler temp is > 4 C, transfer all perishable foods to the walk-in cooler.
