Observation: 1) A blender stored on metal shelf was observed to have food debris inside. Operator informs that he uses it to process nuts sometimes. 2) Cups were stored right side up at dining table. Staff informed that she was drying the cups that were just taken out of dishwasher.
Corrective Action(s): 1) Blender must be properly cleaned and sanitized after use. 2) Properly air dry dishware by storing them upside down, and in designated drying area instead of dining tables to prevent contamination.

Observation (CORRECTED DURING INSPECTION): Detected 0ppm bleach sanitizer in kitchen. Several wiping clothes stored on the prep table or counter in kitchen and front area.
Corrective Action(s): Directed operator in kitchen to empty dirty water and remake solution instead of adding bleach directly. Ensure all wiping clothes are stored in sanitizer between uses.

Observation: Several items were stored without covers in the cooler (e.g. shrimps, veggies, raw meats).
Corrective Action(s): Please cover all foods when not in use.

Observation: Food debris collected on wire racks in sandwich cooler, prep table/shelving units, microwave, clear stand up cooler in kitchen, and domestic fridge in front. Grease build up on exhaust hood. Debris collected on floor between chest freezer and wall in kitchen.
Corrective Action(s): Please do a deep clean of these noted area. Deep clean of these areas should occur at least once a month. Filters on exhaust hood are removeable and can be washed in dishwasher. Do not wait for service twice a year as this is inadequate with the type of menu items available.

Observation: Opened tofu plastic container was being used to store frozen tofu in the freezer at front.
Corrective Action(s): Transfer tofu to food grade containers. Do not reuse plastic tofu containers as the plastic is not meant to be reused.
