Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation:
1) High temperature dishwasher reached 65C at the final rinse cycle.
2) Sanitizer measured 100ppm quats
Correction:
1) Repair dishwasher so that it is able to reach 71C consistently. Repair tech called at the time of inspection. Until it is repaired, you must wash all the dishes in the dishwasher and MANUALLY sanitize (submerge all dishes in a 100ppm chlorine solution for 2 minutes before air drying).
2) (CORRECTED DURING INSPECTION): Chef replaced quat solution and dispenser was able to dispense quat sanitizer at 200ppm.
